    1 c. canola oil
    3 large eggs
    2 c. sugar
    2 c. grated zucchini
    2 tsp. vanilla
    3 c. flour
    1 tsp. baking soda
    1 T. Cinnamon
    1 c. chopped pecans


Mix oil, eggs and sugar. Add zucchini and vanilla. In a seperate bowl, sift flour, soda, and cinnamon together. Add nuts. Combine with zucchini mixture.
Bake in 2 greased loaf pans at 350 degrees for 50 minutes.

Serving Size: Makes 2 loaves, approx. 16 servings
