Number of Servings: 12


    1 cup all purpose flour
    1/2 cup whole wheat flour
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    3 medium bananas, mashed
    3/4 cup white sugar
    1 egg lightly beaten
    1/3 cup unsalted butter melted
    1/3 cup packed brown sugar
    2 TBS flour
    1/8 tsp ground cinnamon
    1 TBS butter


Preheat oven to 375 degrees. Line 12 muffin cups with paper liners.
In a large bowl combine flours, baking soda, baking powder, and salt.
In another bowl, beat together with electric mixer on low speed: mashed bananas, egg, white sugar, and melted butter.
Stir the banana mixture into the flour mixture until blended. Don't over mix. Spoon into muffin cups.
In small bowl, mix together brown sugar, 2 TBS flour, and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping over muffins.
Bake in preheated oven for 20 minutes or until toothpick inserted in center comes out clean. Makes 12 muffins.
