Ingredients

    Ground Turkey, 93% lean, 16 oz.
    1 can (16oz) chickpeas, drained
    1/2 cup tomato sauce
    1/4 bread crumbs
    1.5 cups shredded sweet potato, raw
    1/2 cup chicken broth
    1 tsp cumin
    1.5 tsp four-spice powder
    2-3 tbsp Harissa (spice paste)
    salt/pepper


Directions

Brown turkey in skillet coated with cooking spray; season with salt/pepper.

Combine all ingredients, mix well. Slice tops off peppers and clean out seeds. Stuff peppers. Bake in casserole dish covered with aluminum at 350F 45 minutes or until peppers are tender.

*Green peppers are less expensive and may also be used.
