Number of Servings: 6

Ingredients

    Eggplant, fresh, 1 cup, cubes
    Carrots, raw, 3 large (7-1/4" to 8-1/2" long)
    Onions, raw, 1 cup, chopped
    Garlic, 3 clove
    Leeks, 1 leek
    Scallions, raw, 1 cup, chopped
    Red Ripe Tomatoes, 1 cup cherry tomatoes
    15 oz can Tomato Sauce, salt-free, 1 serving
    Vegetable Broth, 4 cup
    Rutabagas, 1 cup cubed, 1 cup
    Kale, 1 cup, chopped
    Corn Starch, 2 tbsp

Directions

Mix veggies well in a bowl then spread in a deep/wide baking dish for about 10-15 minutes. Move to a deep pot and add all remaining ingredients, except for the corn starch and vegetable broth. Let cook slowly for about 10 minutes then add the vegetable broth, stirring periodically so mixture does not stick. Turn heat down and let simmer for about 30 minutes then remove from heat. Mix corn starch with cold water, ensuring all lumps are gone. Then slowly mix into pot. Serves 6.
