Ingredients
-
1 c white rice flour
1/3 c psyllium husks
1/4 cup sorghum flour
1/4 c brown rice flour
1/4 cup tapioca starch or potato starch
2 tbsp raw cane sugar
1 tsp salt
1/4 cup grapeseed or olive oil
2 tsp instant yeast
1 c lactose free milk or Rice Dream Milk heated to 120 degrees
2 eggs, lightly beaten
White rice flour
Directions
Tips
Warm the milk in a glass measuring cup in the microwave on Hih for about 1 minute, or the traditional way in a small saucepan over low heat.
1. In large bowl of stand mixer, combine white rice flour, psyllium, sorghum flour, brown rice flour, tapioca starch, sugar, salt and oil. Beat on low speed until oil is incorporated. Add yeast and beat for 1 minute.
2. With motor running on low, gradually pour in the heated milk, beating until incorporated. Beat for 1 minute. Beat in eggs until incorporated. Beat for 5 minutes, stopping mixer and scraping down sides of bowl and beater halfway through.
3. Dust prepared baking sheet with white rice flour. Scoop or spoon batter onto baking sheet. With floured hands, shape dough into a circle. Roll out dough to evenly cover the sheet. If necessary, use floured fingers to work the dough into the corners. Cover with a lint-free towel and let rise in a warm, draft free place for 45 - 60 minutes or until doubled in bulk. Meanwhile, preheat oven to 350 degrees F.
4. Bake for 15 to 20 minutes or until lightly browned and a tester inserted in the center comes out clean.
To make pizza, top with your favorite sauce and pizza toppings and broil for about 5 to 10 minutes or until crust is crisp and the toppings are bubbling.
