VEGETABLE SIDE DISH VEGETABLE SIDE DISH

Ingredients

    2 tbsp olive oil
    3 Garlic cloves chopped
    1 large onion chopped
    1/2 aubergine approx 50g diced
    1 small zuchini diced
    1/2 cup of mixed peppers chopped
    5 medium mushrooms chopped roughly
    1/2 can chopped tomatoes
    1 tsp salt or to taste
    1 tsp black pepper or to taste

Directions

put 2 tablespoons of olive oil in large frying pan add onions and garlic and fry untill soft then add the aubergine zuchini peppers and mushrooms and cook for 5 mins add salt and pepper and tomatoes give it another 5 mins and then turn of heat put lid on pan and leave for 10 mins then reheat cooking for 10 mins serve
