Ingredients

    Ancient Harvest Traditional Whole Grain Quinoa, 1 cup
    Swanson Natural Goodness Chicken Broth, 2 cup
    1/2 Summer Squash, diced
    1/2 Zucchini, diced
    5 Baby Carrots, cut in half and diced
    1/2 Onions diced
    1/2 cup Celery, diced
    Coconut Oil (Nutiva Organic) 2 tbsp
    1 clove garlic

Directions

Prepare Quinoa as directed, using broth instead of water.

Saute vegetables in coconut oil, until tender. Mix in with Quinoa and serve.
