    Tomatoes, 1 large whole, quartered
    Cucumber (with peel), .5 cucumber, halved
    Sweet peppers (bell), 1 medium, quartered
    Onions, raw, .5 medium, quartered
    Parsley, 2 sprigs
    Garlic, minced 3 tsp
    Cilantro, fresh chopped, 3 tbsp
    Lemon Juice,4 tbsp
    Tomato juice, 2 cup
    Water, tap, 1 cup (8 fl oz)

    Croutons (not included in nutritional information); I use 6 croutons for about 30 calories.


Put in blender or food processor half the tomato, half the bell pepper, half the onion, half the cucumber, cilantro, lemon juice, garlic and parsley. Blend until liquid. Add remaining vegetables and pulse enough times so the soup is chunky-but the pieces are not too large. Transfer to a large bowl. Add the tomato juice and water, stir and chill. Garnish with your favorite low calorie croutons.

Serving Size: Makes about 6 cups
