    1 cups Panko breadcrumbs
cup shredded cheese of your choice
    1 teaspoon garlic powder
    teaspoon sea salt
    1 teaspoon ground black pepper
    teaspoon Cajun seasoning
    teaspoon red cayenne pepper
    2 egg whites
    1-cup skim milk
4 large dill pickles, quartered lengthwise
    Nonstick spray
Ranch dressing and sour cream not included in Nutritional Info.

1. Preheat the oven to 450F.
2. Combine Panko, shredded cheese, garlic powder, sea salt, pepper, Cajun seasoning and cayenne pepper in a bowl; set aside.
3. Whisk egg whites and milk together in a separate bowl.
4. Coat a cookie sheet with the nonstick spray.
5. Dip dill pickle spears into the egg mixture, then into the bread crumb mixture until well-coated. Dip the pickles in the egg and bread crumb mixtures a second time so each spear is double coated. Arrange on the cookie sheet.
6. Bake the pickles in the preheated oven until light golden brown, 12 minutes. Let stand for a few minutes before serving.
7. Dip them in ranch dressing with sour cream.

  • This was pretty good - i had a hard time getting the breading to stick, so I sprinkled it on top of the pickles. My husband really liked them. :) - 8/21/12
