Introduction

Quick and easy main course, kid-friendly, and nice way to use canned salmon. Not to mention DELICIOUS! Serve with salsa, guacamole, sour cream and refried beans for the side dish. Ingredients

    3 cloves garlic, minced
    1 tsp. olive oil
    1 can (14.75 oz.) salmon
    1-2 tsp. dried basil, or 1 T. fresh, chopped
    1/2 tsp. black pepper
    6 flour tortillas
    2 c. shredded part-skim mozzerella cheese

    optional toppings: salsa, guacamole, sour cream, lettuce

Directions

Saute garlic in oil until tender. Stir in salmon, basil and pepper. Cook til heated through (1-2 min.). Lay out the 6 tortillas, divide the cheese between all, and divide salmon mixture on each. Fold in half and cook with one of the methods: Quesidilla Maker or George Forman Grill 1-2 min., frying pan 1-2 min./ side, or electric griddle 1-2 min./ side. I keep warm by placing in a 200 degree oven until all are cooked, and serve, with optional toppings.

Serving Size: makes 6 quesadillas, halved
