"light" lemon guilt free cupcakes! "light" lemon guilt free cupcakes!
Number of Servings: 20

Ingredients

    cupcakes:

    1 betty crocker lemon cake mix
    1-12oz diet sierra mist or any diet lemon lime soda

    whipped frosting:

    1-8oz light cool whip
    1-8oz sugar free jello lemon pudding mix
    1 cup of skim/light milk
    juice of half a lemon (2tbs of lemon juice)

    cupcake liners.

Directions

preheat to 350, line cupcakes.
pour cake mix & soda into a medium bowl & beat until smooth.
pour mix into liners & bake 18-20 mins.

mix frosting & chill in fridge while cupcakes are baking.
frost cupcakes when completely cooled.

Serving Size: makes 20 half filled cupcakes.
