Introduction

This is an old family recipe that has been updated to increase flavor and cut down on bad fats. This is an old family recipe that has been updated to increase flavor and cut down on bad fats.
Number of Servings: 8

Ingredients

    8 boneless, skinless chicken breast halves
    1/2 cup flour
    2 tbsp. olive oil
    2 packets Lipton onion soup mix
    2 cups Chicken Broth

Directions

Preheat oven to 350 degrees. Heat skillet with olive oil. Dredge chicken in flour and brown. Place browned chicken into oven safe baking dish. Using remaining oil and flour from dredging make a roux in pan. Add Chicken broth to make gravy. Add lipton soup packets to gravy and pour over chicken. Add pineapple to chicken, juice and all. Bake until chicken is done, about 2 hours. Serve with rice, using pan juice as gravy for rice.
