    1 3/4 c Whole-wheat Flour
    3 Tbsp packed light brown sugar
    2 tsp baking soda
    1 Tbsp pumpkin pie spice
    1 c. canned pumpkin puree
    1 1/2 c FF skim milk
    1 large egg
    2 Tbsp unsweetened apple sauce
    2 Tbsp cider vinegar


1. In a large bowl, mix dry ingredients. In a smaller bowl, whisk together pukpkin puree, mild, egg, applesauce and vinegar.

2. Stir pumpkin mixture into dry ingredients until just blended. Let batter rest 5 minutes.

3. Preheat a skillet or griddle to medium-high heat and mist with cooking spray. For each pancake, pour 1/4 cup batter onto skillet. When edges are dry, flip. Cook until golden brown, 1-2 minutes per side.

Serving Size: makes 9 servings of 2 pancakes each
