Ingredients

    All Purpose Flour, 1.5 cup
    Lundberg - Organic 'Sweet Dreams' brown rice syrup, 0.75 cup
    baking powder, 1 tbsp
    Salt, 0.5 tsp (remove)
    Flax Seed, 1 tbsp
    Water, tap, 3 tbsp
    Natural By Nature Certified Organic Fresh Grass-Fed Milk, 0.5 cup
    Olive Oil, Extra Virgin, 0.25 cup
    Blueberries, fresh, 1 cup

Directions

Into a mixing bowl, sift flour, brown rice syrup, baking powder, and salt. In a separate bowl, whisk together flax sed and water and milk. Stir this mixture into the dry ingredients.
Stir in olive oil, stirring just until ingredients are blended. Fold in blueberries. Spoon batter into 12 generously greased muffin cups, filling each about two-thirds full. Bake at 400° for about 20 to 25 minutes.
Makes 12 medium blueberry muffins.
