    1 beaten egg.
    1 1/2 cup flour
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp cinnamon
    1/8 tsp allspice & salt
    1/2 cup each brown and white sugar
    1/2 cup applesauce
    1 1/2 cups peeled, chopped apples


Combine flour and other dry ingredients in medium bowl.

Mix together sugars, applesauce, eggs and vanilla. Slowly add in flour mixture. Mix well. Stir in apples.

Spoon into cupcake pans, filling 2/3 way. I bake at 350 for 18-22 minutes, but keep a careful eye towards the end. Cupcakes are done when an inserted knife comes out clean. Can be topped or filled with cinnamon cream cheese frosting if so desired.

  • Theses were great!!! The only thing I changed was the sugar, I replaced it with Splenda. I made the fat free cream cheese frosting and added cinnamon to it! Perfect topping! I also added 1/2 tsp vanilla to batter. - 6/19/08
