Number of Servings: 3


    1 lb. chicken thighs or drumsticks (or you can make 1 of each and double the recipe)
    1 slice of bacon (uncooked) for each drumstick or thigh
    1 onion, coarsely chopped
    1 can of red kidney beans, drained and rinsed

    Seasoning mix:
    1 tsp. salt
    1/2 tsp. salt
    1/2 tsp. cumin
    1/2 tsp oregano


Preheat your oven to 400 degrees F.

Wrap each chicken piece with a slice of the bacon.

In a baking dish, put in the beans and spread into a layer, then add the bacon wrapped chicken on top. Spread the onions around the chicken, then sprinkle on the seasoning mix.

Bake for 1 hour or until the bacon is crisp and the chicken is cooked through.
