Introduction
If you are ok with wheat and gluten, you can make these with whole wheat all purpose flour and they come out really nice as well. I substituted the whole wheat flour for Bob's Red Mill gluten free all purpose baking flour to make them gluten free. You may want to buy certified gluten free oats as well if you are true celiac or extremely sensitive to gluten. Ingredients:
Vanilla Extract, 1 tsp
Applesauce, 1/3 cup (Mott's blends, canned pumpkin or fruit babyfood also work)
Molasses, 1 TBSP
Canola Oil, 1 TBSP
Brown Sugar, 1/2 cup
Bob's Red Mill all-purpose gluten free baking flour, 3/4 cup (or 3/4 cup whole wheat flour)
Baking Soda, 1 tsp
Allspice, 1/2 tsp
Cinnamon, ground, 1 1/2 tsp
Nutmeg, ground, 1/2 tsp
Ginger, ground, 1/2 tsp
Oats, 1 1/2 cups
Raisins, 2/3 cup (optional)
Pumpkin Seeds or sunflower seeds, 2 TBSP
Millet,2 TBSP
poppy seeds, 2 TBSP
Hemp Seeds (shelled), 2 TBSP
Flax Seed Meal (ground flax), 4 TBSP
Chocolate chips, 1/4 cup (optional)
Directions
1 Mix brown sugar with first 4 (wet) ingredients.
2 Add flour, soda, salt, cinnamon, nutmeg, allspice & ginger.
3 Stir in oatmeal, raisins & seeds.
4 Drop on cookie sheets that have been sprayed with Pam.
5 Flatten and shape into circles with damp fingers, they won't spread much.
5 Bake in 350F oven for about 8 minutes.
