Great Pot Roast for the days that turning the oven on would be ridiculous. Great Pot Roast for the days that turning the oven on would be ridiculous.
Number of Servings: 8


    3 cloves of garlic, or 3 teaspoons of minced garlic
    1 packet of onion soup mix, dry (check onion mix that its gluten free)
    I roast 2 1/2 pound size
    4 cups of potatoes quartered skin on
    2 cans of canned mushrooms or 1/2 pound cleaned sliced fresh mushrooms
    1 cup of onions thick chunks
    1 pound of baby cut carrots
    1 quart of beef stock (gluten free)
    (and salt and pepper to taste, but the onion soups is VERY salty already)


Heat electric skillet on high (approx. 400 degrees F) for a few minutes, begin washing and quartering potatoes in this time.
Once the pan is screaming hot put in roast, UN SEASONED and sear it for at least 4 minutes on each side. During the searing, you can finish up peeling and cutting onions.
Once the roast is seared on all sides, put in the potatoes, onions and carrots. Pulling the roast to on top of the vegetables, rub in with a spoon 1/2 the onion mix on each side of the roast, return to pan on top of veggies, arrange them to fit around and under roast. empty mushrooms,and the garlic onto the roast and sprinkle with pepper. And empty a carton of beef or even mushrrom stock into the pan. I used canned mushrooms and preminced garlic as that is what I had on hand today. lower temp on dial to 325 and cover tightly and let it go for at least an hour. But most likely will take in all 2- 2 1/2 hours to cook.
Serve with bread alone in bowls. Enjoy :)
