Introduction

This is an open-faced sandwich that is quick and easy to make as a warm meal. This is an open-faced sandwich that is quick and easy to make as a warm meal.

Ingredients

    1 TBSP EVOO (for pan)
    1/4 TBSP minced garlic
    salt to taste
    1 can (6 oz) albacore tuna in water
    crushed red pepper (for taste)
    2 TBSP yellow mustard
    2 slices whole grain bread

Directions

Lightly coat a medium skillet with evoo and heat over med-high heat.

Add the garlic and a dash of salt. Stirring frequently, cook for 1 - 2 minutes. Add the tuna and the crushed red pepper, mix completely with the garlic, and heat.

Toast the bread.

Spread half the mustard on each slice of toast, then spoon the tuna mixture over each slice and serve.
