Ingredients

1cup cooked chickpeas or lentils
6 tbsp chopped shallots
1/2 tsp saffron
1/2 tsp turmeric
1/2 tsp chopped ginger
1 1/2 cups canned tomatoes in juice
6 cups water or stock
1 tbsp tomato paste
3 tbsp chopped parsley
3 tbsp chopped cilantro/coriander
2 tbsp flour
juice of half a lemon
salt and peper to taste
Directions
Put chickpeas, in a large saucepan with shallots, saffron, turmeric, ginger, tomatoes and tomato paste as well as half the parsley and coriander. Pour in the stock and stir.
Bring to the boil and then simmer covered until ingredients combine (approx 15 mins).
Remove a little of the cooking liquid and stir it into the flour to make a smooth paste. Add this to the soup and stir well to mix.
pour in the lemon juice and season to taste.
Continue to simmer for a further five minutes, adjust seasonings and serve. Sprinkle the servings with the remaining fresh parsley and cilantro.
Serve with fresh dates, or warm bread.
