Ingredients

3 Cloves of Garlic, finely chopped
2oz (50g) Anchovies, drained
3oz (70g) pitted black olives, chopped
1 Fresh Red Chilli, deseeded and Chopped
1 heaped tablespoon capers, drained
1lb (450g) tomatoes, skinned and chopped
1 rounded tablespoon tomato puree
1 desertspoon chopped fresh basil
salt and freshly milled black pepper
Directions
If wanting to use oil, add 1 tbsp olive oil, to fry onions, garlic and chilli, fry briefly until the garlic is pale gold. Then add all the other sauce ingredients, stir and season with a little black pepper (no salt yet, because of the anchovies).
Turn heat to low and let sauce simmer very gently without a lid for 40 minutes, by which time it will have reduced to a lovely thick mass, with very little liquid left.
Cook your pasta (spaghetti/tagliatelle) to taste, then drain in a colander and return to saucepan quickly before the last liquid has drained through and toss the sauce in it. Adding EXTRA Basil to serve if desired. Mix thorought and serve in well heated bowls.
If you are really going for it, add lots of grated parmesan at the table (Not accounted for in the nutrition table).
