Introduction

I combined a few different recipes to come up with this. Like banana bread, these muffins are very dense and filling. I eat one with a yogurt in the morning and I don't get hungry until lunchtime. I combined a few different recipes to come up with this. Like banana bread, these muffins are very dense and filling. I eat one with a yogurt in the morning and I don't get hungry until lunchtime.
Number of Servings: 12

Ingredients

    1 cup flour
    1 cup whole wheat flour
    6 T turbinado
    1 t baking powder
    1/2 t baking soda
    3 T unsalted butter, melted
    1/4 cup yogurt
    1/2 cup apple sauce
    1 egg + 1 egg white
    2 overripe medium bananas, mashed
    1/4 cup chopped walnuts (optional)
    12 muffin cups (optional)

Directions

1) Combine first 5 ingredients, blend well
2) Pour melted butter into dry ingredients and stir immediately...it should have a crumbly texture, but no large pieces.
3) Combine yogurt, apple sauce, eggs, and mashed bananas in seperate bowl and blend well.
4) Pour wet mixture into dry and stir well. Add walnuts now if you'd like. Leaving them out saves you 16 calories per muffin, but I think they're delicious :)
5) Pour mixture into greased muffin pan and bake at 375F for 15-20 minutes. Use the toothpick test for doneness.
