    Low Fat Cheddar
    Olive oil
    Hing or asafoetida (Spice available at East Indian Grocery stores)


Cut the zuchini in half lenght wise.
Scoop out most of the flesh. You can use the kind of spoon used to make melon balls.
Baste the inside of the Zucchini shells with olive oil, and bake at 385 for 20 minutes.
Add the reminder olive oil to the zucchini and combine with the corn, salt, a pinch of asafoetida (hing) and 1/4 cup of water; simmer the zucchini balls and corn until the mixture is moist and cooked.
Fill the half cooked zucchini shells with corn mixture, cover with grated cheese, put back in the oven for 15 minutes or until golden.
Serve warm with your favorite soup and salad.
Serves one, multiply the receipe accordingly.
