    4 large zucchini
    1 Tbsp. butter
    1/2 c. baby carrots, finely chopped
    1/2 c. black olives, finely chopped
    1/2 c. crimini mushrooms, finely chopped
    1/2 c. cherry tomatoes, sliced
    1/2 c. cheddar cheese, shredded
    1/2 c. monterey jack cheese, shredded


Preheat oven to 350. Slice zucchini in half lengthwise. Hollow out pulp with a melon baller. Puree with hand blender. Mix in chopped carrots, olives, mushrooms and tomatoes. Melt butter in saucepan and brush over zucchini. Fill "boats" with mixture of chopped veggies. Top with cheese. Bake at 350 for one hour.
