Ingredients

    For pesto:
    1 garlic clove
    1/3 cup walnuts
    2 cups basil leaves, loosly packed
    1/2 tsp salt
    3 tablespoons olive oil
    2 tablespoons water
    1 tsp balsamic vinegar

    for scramble:
    2 tablespoons olive oil
    1 small onion, sliced thin
    1 cup grape tomatoes
    2 garlic gloves, minced
    1 pound, firm tofu crumbled
    fresh ground pepper

Directions

Preheat pan over medium-high heat. Add oil to pan, saute onions for 3 minutes or until soft. Add tomatoes and cook for 5 minutes, stirring occasionally until tomato skins start to crack, add garlic saute another 30 seconds.

add crumbled tofu, heat through, add pesto and toss to coat and season with black pepper and serve.
