Number of Servings: 3


    4 cups (about 1 lb) Rice, cooked, a couple days old
    1 oz Peas, frozen
    1 oz Sweet Corn, frozen
    1 oz (about 4 whole) Baby Carrots, diced
    1 oz Onion, diced
    1 large Egg, scrambled
    1 TBSP (about 5 g) Ginger Root, diced
    .5 TBSP (about 10 g) Garlic, minced
    1 whole Jalapeņo, stems and seeds removed, diced
    130 grams (about half of a whole) Chicken Breast, cooked, diced
    2 TBSP Vegetable Oil
    1 TBSP Soy Sauce (reduced sodium)
    1 whole large (about 15 grams) Scallion, sliced diagonally

    Black Pepper to taste


Start by heating up a large skillet and adding 1 TBSP vegetable Oil on medium heat and scramble the egg until it's cooked, but still a bit shiny (do not over-cook). Remove eggs to separate bowl lined with a paper towel.

Wipe skillet with paper towel. Add 1 TBSP vegetable oil and heat on medium. Add ginger and garlic, stir fry about 1 minute. Add rice, 1 TBSP soy sauce, and black pepper; stir fry until heated through, then reduce heat to medium-low and add other vegetables and chicken and stir fry until heated through.

Top with scallions

Serving Size: Makes 3 serving of 9.3 oz each.
