    12 oz - Boneless, Skinless Chicken Breast
    1 cup - onion, chopped
    1 cup - salsa
    6 - 6 inch corn tortillas
    3 oz - shredded cheddar cheese


In a steamer basket, combine chicken and chopped onion. (I put the chicken in frozen and in whole pieces.) After about 10 minutes, check to see if chicken is cooked and then shred the chicken with forks. Stir half the salsa into the chicken.
Spray cooking spray in a small casserole dish and then place two of the tortillas in the bottom, cutting them to fit in a single layer. Top with 1/2 chicken and then 1 ounce cheese. Cover with 2 more tortillas and then 1/2 chicken and 1 ounce cheese. Place the remaining 2 tortillas on the top, then pour the other half of the salsa over that. Top with the remaining 1 ounce of cheese. Bake at 400 for 15 minutes, or until cheese is brown.
