If a light Italian meal is what you are craving then a quick meatball soup is the answer. I love this fresh recipe and make the meatballs really small and bit size. Ingredients

1 tsp Basil
1/2 tsp (0.50 tsp) Garlic powder
1/4 tsp (0.25 tsp) Oregano, ground
2 tsp Parsley, dried
1/4 tsp (0.25) tsp Pepper, black
1/2 tsp (0.50) tsp Salt
1/4 cup (0.25 cup), chopped Onions, raw
2 cup, chopped or sliced Red Ripe Tomatoes
1 tsp (0.25 tbsp) Coconut Milk (Silk) or regular milk or milk alternative
3.50 oz 93% Lean Ground Beef
1/4 cup (0.25 cup) Bread, Progresso Bread Crumbs, Garlic and Italian Herb
2 tsp (.66 tbsp) Extra Virgin Olive Oil

Directions
Serving Size: Makes 1 serving
Start sweating onions in small fry pan with 2 tsp of olive oil.
Make the meatballs with spices, milk, bread crumbs and ground beef. Mix well. Form into little meatballs. (By forming into meat balls it ensures the meat will not crumble into a mush!)
Add to cooked onion and fry together until meat is cooked through.
Add chopped tomatoes and rest of spices scraping fried bits off bottom of pan. Cook until desired tenderness of tomatos.
Serve in soup bowl.
