A tasty way to eat the zucchini from your garden-- you won't even taste it! A tasty way to eat the zucchini from your garden-- you won't even taste it!
Number of Servings: 15


    3 beaten eggs
    2 cups granulated sugar
    3 teaspoons vanilla extract
    1 cup oil
    2 cups grated zucchini (coarse)
    3 cups flour
    1 tablespoon salt
    1 tablespoon baking soda
    3 tablespoons ground cinnamon
    1/4 teaspoon baking powder
    You can also add one cup raisins.


Mix first 5 ingredients ina a large bowl. Mix the next 6 ingredients separately. Then stir the egg-zucchini mixture until blended. Pour into 2 well-greased loaf pans.

Bake at 350F for one hour, cool, and enjoy!

Serving Size: Around 15 1/2 inch peices, depending on pan.
