I think you could make this with 1 C applesauce and no oil and get good results I think you could make this with 1 C applesauce and no oil and get good results
Number of Servings: 32


    3 large Egg, fresh, whole, raw
    1 tsp Salt
    0.50 cup Canola Oil
    0.50 cup Applesauce, unsweetened
    0.50 cup Orange Juice
    2 cup, sliced Zucchini
    1.25 tsp Baking Powder
    0.50 tsp Baking Soda
    3 cup Flour, white
    1.0 cup Granulated Sugar
    .75 cup, chopped Pecans
    12 tbsp *Flax Seed Meal (ground flax)
    4.5 tsp Cinnamon, ground


Combine wet ingredients. Combine dry ingredients. Add wet ingredients, then fold in zucchini and pecans.

Pour into two 8x4x2 loaf pans, sprayed with PAM. Bake at 350 for 50-60 minutes or until toothpick comes out clean. Cool in pan 10 minutes before removing.

Serving Size: Cut eat loaf into 16 slices. Each slice is about 150 calories.

I also made this with small loaf pans (4) or small muffins
