Ingredients

    1 1/2 cups purple hull peas
    2 tsp dijon mustard
    1 tbsp olive oil
    1 tsp balsamic vinegar
    sea salt and paper to taste
    parsley and cilantro to taste
    lemon juice to taste

Directions

Cook peas for about 30 minutes (al dente)
Mix mustard, olive oil, herbs, salt/pepper, lemon juice in bowl. Add cooled peas to mixture and toss.
