Ingredients

2 c Egg Beaters
1 T olive oil
1/2 white onion, chopped
1 green pepper, chopped
6 oz canadian bacon, chopped
3 cloves garlic
4 T grated romano cheese
1/2 c shredded cheese (I used reduced fat)
2 T fresh basil, minced
salt & pepper to taste
Directions
Heat oil in 10-inch ovenproof non-stick skillet over medium high heat. Add onion, green pepper and canadian bacon and saute until lightly browned, 6-8 minutes. Reduce heat to low and add garlic, cooking to blend flavors for an additional minute or two.
Meanwhile, beat eggs, cheeses, basil, salt & pepper to taste.
Shake the skillet to evenly distribute ingredients, then add the egg mixture. Without stirring, cook until the eggs start to set around the edges - a few minutes. Transfer the skillet to the oven and bake until eggs are set and puffed, about 10-12 minutes. Slide onto large plate, cut into four wedges, and serve.
