    1 lemon
    1 T olive oil
    1/2 tsp cinnamon
    1/2 tsp ground cumin
    1/2 tsp salt
    1/4 tsp cayenne

    2 cups garbanzo beans
    1/2 small red onion
    1 cucumber
    3 medium tomatoes
    2 T mint leaves, thinly sliced


Whisk together all dressing ingredients in a medium bowl.

Drain and rinse garbanzo beans. Chop onion and place into a strainer; rinse under cold running water. Drain & pat well with apper towel. Chop cucumber; seed and chop tomatoes. Add garbanzo beans, onion, cucumber and tomatoes to dressing; toss to coat. Thinly slice mint and fold into salad.

Serving Size: Makes 4 servings
