Introduction

Ingredients

    1 Cup Raisins
    2 oz. Amaretto Liquor
    1 1/2 Cups Oat Flour
    1/2 Cup Oat Bran
    1/4 Cup Splenda Brown Sugar
    1 tsp. Ground Cinnamon
    1 tsp. Baking Powder
    1/2 tsp. Baking Soda
    1/2 tsp. Salt
    1/2 Cup Unsweetened Applesauce
    1/2 Cup Zuchinni Pulp (with skin)
    1 Large Egg
    2 Large Egg Whites
    2 Tbsp. Olive Oil

Directions

(Soak 1 cup of raisins in 2 oz. amaretto liquor for about 4 hours or longer.) In a large mixing bowl thoroughly blend together dry ingredients. In a smaller mixing bowl, thoroughly mix together liquid ingredients including applesauce and zuchinni pulp. Combine the contents of the liquid mixture to the larger bowl of dry ingredients. Stir until all the dry ingredients have become moistened. Fold in the raisin and amaretto mixture. Lightly grease or line muffin tins with paper cups. Evenly distribute batter into the 12 cups. Bake at 400 degrees for 15 minutes or until toothpick comes out cleanly when tested.
