Introduction

This is a great vegetarian filler for tortilla's, nachos, Mexican salad, tacos, etc. This is a great vegetarian filler for tortilla's, nachos, Mexican salad, tacos, etc.

Ingredients

    2 cups dry quinoa
    4 cups water
    15 oz can Hanover Black Beans
    15 oz can corn
    15 oz can Diced Tomatos
    1 tbsp minced garlic
    1 tbsp ground cumin
    1 tsp garlic salt
    1/2 tsp black pepper
    1 tbsp lime juice

Directions

Pour water and Quinoa into a saucepan and boil. Reduce heat and simmer 15 min. Fluff with fork. While Quinoa is cooking open the Beans, Corn, and Tomatoes and strain. Add dry spices and canned vegetables to Quinoa and stir.

Serving Size: Makes 20 ladle sized servings
