Introduction

This is an incredibly light and crispy waffle. Makes waffles for about 10 people. Half for a smaller group, and freeze any leftovers. This is an incredibly light and crispy waffle. Makes waffles for about 10 people. Half for a smaller group, and freeze any leftovers.
Number of Servings: 10

Ingredients

    3 cups whole wheat pastry flour
    1/2 cup canola oil
    4 tsp baking powder
    1/2 tsp salt
    2 cans or bottles of beer

Directions

Process the flour, oil, baking powder and salt in a food processor until all incorporated. Put in a bowl and add the 2 cans of beer. Let set, covered with plastic wrap for at least an hour. If too thick, add bit of water until consistency looks right for you. Bake on hot waffle iron, using directions with machine. These are crispy, light waffles that are delicious served like belgian waffles with fresh fruit and cream, or with maple syrup as usual.
