Introduction

Makes a sweet, super moist muffin without all the fat that comes along with baking with oil. Makes a sweet, super moist muffin without all the fat that comes along with baking with oil.

Ingredients

    1/2 cup white granulated sugar
    1 cup brown sugar, packed
    3 eggs
    1 cup unsweetened applesauce
    2 tsp vanilla extract
    2 cups flour
    1 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    2 medium pears, peeled and diced
    2 tbsp minced fresh ginger

Directions

1. Preheat oven to 350F. Whisk eggs together. Add sugars, vanilla and applesauce and whisk together until mixed.

2. In a separate bowl, whisk together flour, baking powder, baking soda and salt. Add to wet mixture and mix with spatula until just mixed.

3. Fold in fresh pear and ginger. Pour batter evenly in muffin tin lined with paper cups.

4. Bake for 20-25 minutes, or until tops are golden brown and tops bounce back when pressed on. Allow to cool completely. Will keep about 1 week in fridge.
