Number of Servings: 4


    1 can organic kidney beans
    1 can organic diced tomatoes
    1 small, organic onion, chopped
    1 can organic, low-sodium vegetable broth
    3 cloves garlic, minced
    ½ lb. 93% lean ground turkey
    2 t. chili powder
    ⅛ t. cayenne pepper (optional)
    Salt and pepper


Cook the ground turkey in a skillet with the onion and garlic, until onion is translucent but not browned.

In a large pot, combine beans, tomatoes, veggie broth, and ground turkey mixture. Stir in chili powder and cayenne (if using) and add salt and pepper to taste. Let simmer for at least an hour. (I put it on low/med-low for several hours.)

Makes four hearty servings.
