    1/4 C Chia Seeds
    1 C Soy Milk
    1 Tbsp Vanilla (to taste)
    1 Tbsp Pure Honey (to taste)
    1 Tbsp freshly ground Flax seeds (not necessary)
    1 Tbsp shredded, unsweetened coconut (not necessary)


Combine ingredients in plastic container or glass jar--make sure you have a tightly sealed lid. Cover and shake ingredients together. Place in fridge and let sit over night. Seeds will expand and take on the texture of tapioca pudding. Enjoy.

Serving Size: Makes 1 serving (I eat it for lunch)
