Introduction

Ingredients

    1 can Pink Salmon
    1 cup Panko breadcrumbs (I used Trader Joe's)
    3/4 cup egg beaters
    1 cup chopped bell pepper
    1/2 cup onion, chopped
    3 tsp freshly minced garlic
    dash of Worcestershire sauce
    dash of freshly ground black pepper

Directions

Add drained canned salmon (no need to remove bones), bell pepper, onion, garlic in a food processor. Pulse 25-30 times till combined. Transfer to a mixing bowl. Add bread crumbs, egg beaters, Worcestershire sauce and freshly ground pepper. Mix by hand.
Heat a non stick frying pan. Spray/ mist with canola oil. Scoop and place 1/3 cup patty mix on frying pan. gently flatten with back of cup. Cover and cook for 2-3 minutes each side. Serve on a bed of salad.
