Introduction

Ingredients

    1 medium onion
    8 oz can of mushrooms
    1 tbs vegetable oil
    1 cup sour cream
    6 large eggs
    2 tbs whole wheat flour
    1/4 tsp salt
    1/8 tsp black pepper
    dash of hot pepper sauce if you desire

Directions

Preheat oven to 350 degrees. Lightly grease shallow 1 quart baking dish.

Coarsely chop onion. Combine with mushroom pieces.

Heat vegetable oil in medium skillet over medium heat. Add onion and mushrooms; cook and stir until tender, about 5-7 minutes. Set aside.

Add sour cream, eggs, flour, cheese, ham salt, black pepper and pepper sauce into a large mixing bowl. Mix well. Add in onions and mushrooms.

Pour mixture into prepared baking dish. Bake until knife inserted near center of casserole comes out clean, about 40 minutes.

Another variation would be to add cottage cheese for a bit thicker mixture. Or any other form of meat you want.
