Number of Servings: 4


    4 slices WW toast, cut in 6 squares
    6 oz cheddar cheese
    1 med tomato, cut in slices
    2 T green onion, chopped
    2 eggs
    t powdered mustard
    t paprika
    C basil
    1/8 t pepper
    1 C 1% milk


Preheat oven to 350.

Spray 9 pie pan with Pam (or use olive oil adds few more calories)

Arrange toast in pan and sprinkle with half of cheese (3 oz).

Top with tomato slices and green onion, then cover with remainder of cheese.

In a small bowl, beat eggs with mustard, and spices. Add milk and beat until well combined. Pour over toast/tomato/cheese mixture.

Bake about 40 or until brown and puffy.

Serving Size: Divide into four
