    Olive oil, 1 Tbsp.
    Ground beef, lean, 16 oz
    Mixed Vegetables, frozen, 1 package (10 oz)
    *Wheat flour, white, all-purpose, unenriched, .25 cup
    Pacific Natural Foods Organic Beef Broth, 1 cup, 2 cup
    Instant Mashed Potatoes, 4 servings


In a cast-iron skillet:
Stir fry frozen vegetables in olive oil until hot but still crispy. Set aside. Sauté crumbled ground beef until browned. Return vegetables to pan, fold meat and vegetables together. In a separate cup or bowl, mix flour with 1/2-1 cup of broth and stir until smooth. Add to rest of broth, and pour broth over mixture in pan. Let simmer on low heat – and turn on the broiler – while you mix mashed potatoes. Spoon mashed potatoes over mixture in skillet and gently spread to edges of pan. Spray with olive oil and put under broiler until brown.Cut into 6 wedges and serve with salad.
