Introduction

I wanted to make something edible that gave me more veggies in a day! I wanted to make something edible that gave me more veggies in a day!
Number of Servings: 1

Ingredients

    2- 4 sec. sprays of aerosol olive oil (equal to about a teaspoon)- one for eggs and again for veggies
    1/4 cup- spinach leaves (fresh)
    1/4 cup- fresh mushrooms
    1/2 -fresh medium sized tomato (ones sold on the vine)
    2 -fried eggs
    1 -slice Swiss cheese
    Salt and pepper to taste

Directions

Cook eggs thoroughly (I fried mine, this would be good scrambled too). Put aside on a plate. In the pan, spray olive oil in the pan. Saute mushrooms, spinach, and tomatoes for about 3 to 5 minutes ( do not burn ). Place on top of the eggs. Place swiss cheese on top and let melt over hot veggies and eggs. Sprinkle with salt and pepper to taste.

I enjoy with a big cup of coffee, wheat toast with sugar free preserves, and active yogurt. It's delicious!

Serving Size: Makes a really great breakfast for 1 :)
