Ingredients

*barilla lasagna - 1 noodle, 4 serving (remove)
*Laughing Cow Light Creamy Swiss Original Cheese (Serving = 1 wedge), 4 serving
*Kraft Mozzarella Finely shredded Part Skim cheese, 1 cup
Francesco Rinaldi Healthy Tomato & Basil Pasta Sauce, 1 cup (divided)
Mushrooms, cooked, .5 cup pieces
Onions, raw, .5 cup, chopped
Spinach, fresh, 1.5 cup
Garlic, 1 cloves
Green Peppers (bell peppers), 0.5 cup, chopped
Olive Oil, 2 1tsp
Directions
Cook noodles as directed.
Heat oil in skillet. Add onions, peppers and garlic; cook till opaque. Add mushrooms and spinach and cook till mushrooms are tender and spinach wilted. Remove from heat.
Rinse noodles and drain well. Lay each noodle on flat surface. Spread each noodle with Laughing Cow cheese wedge. Evenly spread 1/4c mozzarella over each noodle. Evenly divide veggies over each noodle. Roll up each noodle.
Spread 2 tablespoons of sauce over bottom of baking dish sprayed with olive oil spray. Place each noodle on sauce. Divide remaining sauce over each noodle. Add a tablespoon of mozzarella on top of each noodle.
Bake in 400 degree oven about 25 minutes. Remove and let set for about 5 minutes.
