Ingredients

    1/4 cup liquid egg substitute
    1 tsp ground turmeric
    1/2 tsp hot pepper sauce
    1/4 tsp salt
    1/4 tsp black pepper
    1 tsp extra virgin olive oil
    2 Tbsp firm tofu

Directions

1. In a small bowl, and with a fork, blend egg substitute, turmeric, hot pepper sauce, salt and pepper.
2. In a small, nonstick skillet over medium-low heat, heat olive oil.
3. Crumble tofu into the skillet and cook, stirring, for 20 to 30 seconds or until warmed through.
4. Add egg mixture to skillet, and stir for 1 minute or until egg is set but still creamy. Serve immediately.
