    1 C cooked brown rice
    1 C non-fat or low fat yogurt, plain or lemon
    2 large eggs
    1/2 fresh apple, chopped coarsely
    1/2 C raisins
    2 tsp sugar
    sprinkle of cinnamon


Mix everything together well in baking casserole. Bake uncovered at 300 X 40 minutes or Microwave at 60% power for about 7 minutes. (Middle can be wiggly, but not liquidy). Let set for a few minutes before eating. Adding fresh fruit to the top adds bonus nutrition and fiber.
