    16 oz turkey sausage
    2 cups 2% sharp cheddar cheese
    4 Light English Muffins
    med. onion, chopped
    red & yellow peppers, chopped (1/2 cup)
    1/2 chopped mushrooms
    1/2 cup chopped spinach
    4 tbsp chopped green canned chili peppers
    2 cups fat free milk


Brown sausage, onions, mushrooms, spinach, chilis and peppers. Drain and set aside. Spray bottom of 9x13 pan, slice english muffins and place in bottom. Distribute the sausage mixture over the muffins. Sprinkle with half of the cheese. Mix the eggs and milk (season to taste) and pour over the sausage mixture. Refridgerate overnight. Take out of refridgerator an hour before baking. Bake at 350 for 30-45 minutes or until knife inserted in center comes out clean.
