Number of Servings: 12


    1 Cup 5 grain cereal (Bob's Red mill)
    1 Cup flour
    3 Tbs brown sugar
    1 tsp baking soda
    1/2 tsp baking powder
    1/4 tsp salt
    1 tsp cinnamon
    1/2 tsp nutmeg
    1 egg
    2 medium size bananas
    1/2 cup buttermilk


Preheat oven to 400 degrees. Spray a 12 cup muffin tin with baking spray, or line with paper liners.
In a large bowl, combine cereal, flour, brown sugar, baking powder, baking soda, and spices. Make a well in the center. Mash the bananas with a fork and add to the well. Whisk egg and buttermilk together and pour into the bananas in the well. Using a fork, quickly combine all ingredients together until all is moistened. Don't over mix. Divide batter evenly between muffin cups. Bake for about 12 mins, or until a pick inserted in the center comes out clean. Cool in tin 5 mins and then remove to a wire rack.
