Introduction

I made this for Mama on 8/5/11. It was delicious and easy to make. It's like a custard which makes it easy and simple. I used home-grown apples which may not be the best "baking" apples. Would try with some others from the store next time that might prove more flavorful and better baking as well. But still was delicious for breakfast this fine day....which happens to be the 26th year anniversary since I got my job at STandard Insurance Company! Ingredients

    Milk, 2%, 6 cups
    8 large fresh eggs
    1 Tablespoon Salt
    4 cups Apples, sliced (1/8" or thinner as you would for a pie)
    1 cup raisins
    8 slices Wheat Bread
    2 cups Old-Fashioned Quaker Oatmeal
    1 cup Splenda Sugar Blend (for baking)
    4 Tablespoons Imitation Vanilla
    1 Tablespoon Salt
    2 Teaspoons Cinnamon

Directions

Cut up 8 slices Wheat Bread into cubes and set into a large bowl that will hold them a bit. Then add to bread crumbs 2 cups oatmeal: note: 2 cups is all (or 4 * 1/2 cup = 2 cups). Then add 1 cup raisins too. Set all aside while you peel and cut up 4 cups apples and place in the same bowl and mix all together well.

Now make the CUSTARD: put 6 cups milk in one LARGE bowl. Then crack 8 eggs (whole) into another medium to large bowl and with electric beater blend together eggs on low speed adding Splenda Blend (1 cup = 48 tsp), 2 tspns Cinnamon, 2 Tablespoon Salt and 4 Tablespoons Vanilla until dry ingredients and vanilla are blended and eggs are a bit frothy. Add to your milk and continue to blend on low speed until mixture is well blended.

PREPARE OVEN: set to 325 degrees and preheat.

PREPARE CASSEROLE DISHES (Two 1 quart-sized casserole dishes with lids). Use non-stick spray to coat to keep food from sticking. Place bread cube mixture into each so that they are evenly distributed. Now POUR egg-milk mixture evenly into both casseroles so that all milk and egg nearly covers bread-oat cube mixture (with raisins and apple slices -- cut about 1/8" thin).

PLACE into preheated 325 degree oven and bake 45 minutes. CHECK to see if knife comes out clean or shows moisture from egg-milk mixture is custard-like in center, then it's done. If not done completely, continue baking for about 15 more minutes and CHECK again. Dish should be custard-like, apples slightly soft and well-baked. You may wish to brown the top a bit and take the lid off for the last 15 minutes of baking time.

In short, Bake 1 hour at 325 degrees or until apples are tender and custard is done in the middle.
